A lovely filling vegan lentil curry where we have swapped rice for a mix of cauliflower & quinoa to give you added fibre, vitamins, and minerals. This dish will certainly fill you up and keep you from unnecessary snacking.

Remove the leaf with fresh salad form the bowl. Place the bowl in a pre-heated oven at 180 degrees C. Heat for 10-15 minutes or until piping hot. Alternatively, heat in the microwave until piping hot throughout. Add the fresh salad to the side and enjoy!
Ingredients: Red lentils, quinoa, tomato, sweet potato, cauliflower, spinach, olive oil, onion, radish, olive oil, vegetable oil, spices, garlic, ginger, coriander, salt, pepper.
